Ingredients

Chicken, 1 tender bird weighing about 1 1/2 pounds (about 600 grams), dressed
Fresh ginseng root, 1, thoroughly cleaned
Dried jujubes, 3 to 5
Chestnuts, 3 to 5, peeled
Garlic cloves, 4 to 7, peeled
Glutinous rice, about 1/4 cup, soaked
Black pepper

Method

    [Ginseng-Stuffed Chicken]


    Procedure

    1. Full the body cavity with glutinous rice, chestnuts, garlic cloves, ginseng, and jujubes. Saw up the tail vent.
    2. Place the stuffed chicken in hot water sufficient to cover the chicken and bring to a boil. Then lower the heat. Simmer over medium heat until the chicken is cooked.
    3. Take out the thread.
    4. Serve with salt and black pepper.
