[Ginseng Kimchi (Pickled Ginseng)]


Ingredients

Fresh ginseng roots, 2 to 3, thoroughly cleaned
Cucumbers, 1 to 2, cut into 2/1 * 1 3/4 inch (1.5 * 4.5 cm) thin slices
Carrot, 1 (small), cut into 1/2 * 1 3/4 inch (1.5 * 4.5 cm) thin slices
Green onions, 1 to 2 stalks, cut into julienne about 1 3/4 inch (4.5 cm) long
Garlic cloves, 3 to 4, cut into julienne
Red pepper threads or red pepper, 2 to 5, cut into narrow strips
Red pepper powder (optional)

Method

    [Ginseng Kimchi (Pickled Ginseng)]


    Ingredients

    1. Cut the cleaned ginseng roots into thin slices of 1/2 * 1 3/4 inch (1.5 * 4.5 cm) size.
    2. Combine the cut-up cucumbers, carrots, and ginseng slices. Sprinkle with salt and allow to stand for about 20 minutes.
    3. Add the garlic, red pepper powder, and red pepper strips to the vegetable mixture. Mix well. Then add the green onions. Toss and put the mixture in a crock.
    4. Add a brine, prepared by dissolving salt in water, to the seasoned vegetable mixture - sufficient to make the Kimchi souse, 4 to 5 times the volume of the vegetables. Allow to ferment to taste.
