Ginseng Gingerbread

Ingredients

1 cup molasses
1 cup boiling water
1 teaspoon baking soda
1 teaspoon cinnamon
2 teaspoons ginger
3 1/2 cups flour
1 tablespoon ginseng powder
1 cup sugar
1 cup shortening
2 eggs, lightly beaten

Method

    1. Preheat oven to 375 degrees.
    2. In small mixing bowl, combine molasses, boiling water and baking soda. Stir to combine and set aside.
    3. Combine cinnamon, ginger, flour and ginseng , and sift into mixing bowl. Set aside.
    4. Place sugar and shortening in large bowl of mixer and cream until light and fluffy. Add eggs one at a time, beating after each addition to incorporate. Add molasses mixture and beat to incorporate. Add flour mixture and beat to incorporate.
    5. Pour batter into a greased and floured pan, approximately 12-by-7 1/2 -by-2 1/2 inches, and bake 20 to 25 minutes or until toothpick inserted in center comes out clean.
